Thursday 19 September

Live Cooking Demonstration
with Shannon Fleming (Class of 1999)

Shannon Fleming began his culinary career at 17, starting his apprenticeship immediately after finishing his Year 12 exams. His passion for South Australian produce developed during his time at Brisbane's Watt Modern Dining, leading him to return to the Star of Greece cafe in Port Willunga. In 2008, Shannon joined Penfolds Magill Estate, where he explored wild ingredients and native Australian flavours under Jock Zonfrillo. After five years, he co-founded Orana and Blackwood with Zonfrillo, earning multiple awards including Advertiser Restaurant of the Year in 2014.

After nine years in fine dining, Shannon shifted his focus to native foods, founding Forgotten Seasons in late 2017. Through this catering and consulting company, he has travelled to remote communities and worked with Indigenous company Something Wild to improve the supply chain for native ingredients. In 2018, he joined LOT.100 to oversee the restaurant, incorporating seasonal and hills-focused produce into collaborations with local beverage brands like 78 Degrees, Hills Cider, and Mismatch Brewing.

Shannon is also committed to fundraising, having founded the Annual Collaboration for a Cause charity dinner, which has raised over $65k for the Women's and Children's Hospital Foundation.

We are fortunate to have him share his culinary expertise and passion with our current students, demonstrating innovative techniques and delicious recipes.
